1. Burrito - A large flour tortilla folded to enclose a variety of fillings
Can I have a burrito for lunch?
2. Carnitas - Bits of shredded, cooked pork that are cooked again in fat until browned
My mother makes the best carnitas.
3. Chayote - A large gourd-like fruit about the size and shape of a pear but with
furrowed, pale green skin
I have never eaten chayote.
4. Chile - Irritating seeds and pods of the capsicum family with over 200 varieties
This chile is so hot that I think it is blistering my lip.
5. Chorizo - A spicy pork sausage used in Mexican and Spanish dishes
The chorizo at this restaurant is excellent.
6. Cilantro - Light green , delicate leaves of the coriander plant used as a flavoring
It doesn't taste right without cilantro.
7. Crema - A thick, ripened Mexican cream similar to sour creme
She always uses crema in her cooking.
8. Empanada - Turnovers with either savory or sweet fillings in a pastry crust
The empanada served here is the best in town.
9. Enchilada - Tortillas rolled around a meat and cheese filling and baked
He ordered an enchilada but they gave hime a taco.
10. Flan - A Mexican dessert of custard baked over a layer of caramel
My father says I must clean my plate if I want to have flan for dessert.
11. Flauta - A corn tortilla tightly rolled around a shredded meat filling and then fried
She had a flauta and chile releno combination plate.
12. Frijoles - Beans
When I was young we were poor and had frijoles almost every day.
13. Refritos - Beans mashed with seasonings and fat and then refried
These beans are not refritos.
14. Guacamole - Dip made with mashed avocados and seasoned with lime and spices
You can ask for more guacamole but I think they just ran out of it.
15. Jicama - A large, bulb-shaped vegetable with crisp, crunchy white flesh eaten raw
Jicama with lime juice, chili powder, and salt is fantastic for a snack!
16. Masa - Traditional cornmeal dough flattened by hand into tortillas
We take the masa and all sit around and make tortillas.
17. Chocolate - A grainy mixture of chocolate and almonds, cinannamon and vanilla
Mexican chocolate is quite different than German chocolate.
18. Mole - A rich, thick, dark sauce of onion, garlic, sesame, pumpkin
seeds, chiles, and chocolate
She loves mole but I just don't care for it.
19. Piloncillo - Small, hard cones of brown, unrefined sugar
They are grinding up piloncillo to sprinkle on the pan dulce (sweet bread).
20. Plantain - A large firm type of banana tasting similar to potato
The people in some countries eat plantain every day.
21. Quesadillas - A large flour tortill spred with cheese, salsa, and other things folded
and fried
She ordered two quesadillas but only ate one.
22. Queso - A white farmer's cheese
That enchilada will tast much better if covered in melted queso.
23. Salsa - A fresh or cooked sauce of red tomatoes, chilies, tomatillos, onion and
cilatro
They always have the freshest salsa here.
24. Tomatillo - A tomato relative that is green with a slightly citrus (lemon) flavor
The salsa just doesn't taste right without the tomatillos in it.
25. Tortilla - An unleavened, round, flat bread made from corn or wheat flour and
baked on a griddle
Can you get both flour and corn tortillas for dinner?
